  Thanks for this recipe. I have been looking for it for some time. This is made at a local restaurant and it is marvelous hot. I will use golden raisins since I detest raisins in general. I find that men love this, especially when it is made with lots of cinnamon. Now, how about posting some easy french dishes lol. Thanks again. Dove

Cinnamon Raisin Rice Pudding

  Here's a recipe I make for my Dad. He just loves it! I make it in a Pyrex pan. I mix some cinnamon in, too, instead of just sprinkling it on top.

1 cup. rice
2 qts. milk
1 cup seedless raisins
2/3 c. butter or margarine
6 eggs, beaten
1.5 cups sugar
2 tsp. vanilla
1/2 tsp. salt
Cinnamon

Mix rice with 1 quart milk in top of double boiler; cook until tender, stirring occasionally. (This will take about an hour) Add raisins and butter. In a separate bowl, combine eggs, sugar, vanilla, 1 tablespoon cinnamon, salt and the other quart of milk. Stir into hot rice mixture. Pour into greased 3 quart baking dish. (I like to use a rectangular Pyrex pan, to check for browning.) Sprinkle top with more cinnamon. Set dish on a sheet pan, to catch possible drippings. Bake at 325 degrees to 350 degrees for 30 minutes or until set. (Can take up to 45 minutes!) What's interesting, is that the pudding will rise/puff up when it's nearly done. Remove from the oven and allow to cool for at least 30 minutes. It will "fall" back down again!

This is a bit of work to make with the double boiler thing and all, but worth it. Enjoy!
